Squash is one of our favorite crops to grow because it brings so much variety to the table—from fresh, tender summer squash to rich, sweet winter squash that stores beautifully into the colder months. At Harding Homegrown, we grow a rotating selection of both summer and winter squash, chosen for flavor, texture, and performance in our Western Colorado climate.

Summer Squash: Fresh, Tender & Peak Season

Our summer squash is harvested young and tender for the best texture and clean, mild sweetness. You’ll often find varieties like: Zephyr, Yellow Crookneck, Golden Glory, and more. These are perfect for grilling, sautéing, spiralizing, or throwing into a quick summer stir-fry.

Winter Squash: Sweet, Dense & Comfort Food Ready

When fall rolls in, our winter squash takes over—thick-skinned, nutrient-dense, and packed with natural sweetness and deep flavor. We grow favorites like: Butternut, Honeynut, Acorn, plus additional varieties depending on the season. They’re incredible roasted, turned into soup, blended into sauces, or baked into comforting meals all winter long.
